SAN GIOVANNI





Le piante madri sono  state rinvenute nel comune di Città di Castello (PG). Un tempo era molto diffusa, pregiata per la rusticità e per la precocità di maturazione. L’albero è mediamente vigoroso, presenta una chioma aperta; produce in maniera costante, e fiorisce in epoca medio precoce.  E’ molto rustico e fertile.  Poco  sensibile alla ticchiolatura, poco sensibile alla Carpocapsa.  Il frutto è di media grandezza (gr. 140-165), di forma rotondeggiante, leggermente schiacciato, simmetrico. Il peduncolo è medio grosso,  inserito in una cavità quasi acuta, mentre la cavità calicina  è semiaperta, poco profonda.

La buccia è lucida, liscia di colore verde con sfumature rosate e a maturazione vira al giallo; la polpa è bianca, leggermente farinosa, molto aromatica, di eccellente qualità. Il frutto viene raccolto tradizionalmente per San Giovanni alla fine di Giugno. E una delle nostre poche mele precoci ma non si conserva.

Queste mele sono adatte alla essiccazione. Tagliandole a fette  e poste al sole caldo dell’estate.  Data la loro dolcezza e il loro buon profumo sono adatte alle conserve insieme a uva sultanina e cannella. Il grande erborista Mattioli dice che questo genere di mele di giugno è utile allo stomaco e specialmente il suo vino.
This variety was recovered on a number of farms in the area of Citta’ di Castello (Perugia). Once very widespread, it is now cultivated in very few specimens in the high hills of the area of origin. It is a valuable variety for its hardiness and its early ripening time and for the good organoleptic characteristics of the fruit. The plant is vigorous and very hardy with a spreading habit. It crops regularly and blooms in early to mid-season. The fruit is medium, roundish, symmetric, with a medium-large stem inserted in an acute and moderate cavity. It has a semi-open calyx. The skin is shiny, smooth, green in colour and shading to pink but veering to yellow at ripening time. The lenticels are not very marked. The flesh is white, very aromatic and sweet, slightly floury and of excellent quality. This apple is traditionally harvested in the summer around the San Giovanni holiday. It is one of the few early apples but it does not store for long. It must be eaten fresh and at best it can be made into jams. A good system to preserve these apples is to dry them sliced in the hot summer sun. Given their sweetness and their good scent they are suitable for preserves with the addition of sultana grapes and cinnamon. Mattioli says that this kind of June apple is beneficial for the stomach especially when made into wine.
